The Kibingo washing station in Kayanza, Burundi accepts coffee from over 3500 local farmers. Each producer typically has only 300 trees on roughly 0.10 hectares of land. These small-holder farmers are reliant upon coffee for their livelihood. 

Microlot production is typical for Burundi, and it often takes more than one producer’s delivery to create a lot. The attention to detail in the processing at Kibingo makes a big difference in the quality and uniformity of each lot. The typical processing method in Burundi is somewhat similar to Kenya, with a dry fermentation of roughly 12 hours after de-pulping, followed by a soak of 12–14 hours in mountain water. Coffees are floated to sort for density, then soaked again for 12–18 hours before being dried in parchment on raised beds. 

As a result, we find a juicy, syrupy-sweet cup. Roasted to highlight the natural acidity of the bean, we pick up on notes of fresh apple, panela, and dried tropical fruits.
