Honey Aponte is a seasonal return favourite from Nariño, Colombia. This coffee is a tribute to both the land and the people who cultivate it.
This bean is grown by smallholders belonging to the Inga community of Aponte, whose lineage is traced to the ancient, pre-hispanic Inca civilization. The Inga community takes pride in their coffee production, processing the beans on their own farms. The region’s cool yet humid climate combined with the nutrient-rich ash from the Galeras Volcano produces beans of exceptional complexity and sweetness.
This honey-processed coffee is dried on stacked raised bed solar dryers, minimising water usage and preserving the natural nuances of the bean. Our goal was to highlight its sweetness & delicate nature. Suited best for filter brewing, we find notes of milk chocolate, orange, and honey in the cup.
