This bean comes from El Ocaso Farm in Quindio, Colombia, owned by third-generation coffee grower Santiago Patiño. After completing his business studies, Santiago focused on improving the coffee production process at his family’s farm. By redesigning fermentation protocols and introducing new, exotic varietals, El Ocaso coffees continue to showcase unique and complex flavour profiles.
Caturron - a rare mutation of the varietal Caturra, was discovered in Acevedo, Huila. Caturron trees are slightly taller than those of Caturra, and their cherries ripen to a dark purple colour. At this stage, the mucilage has a distinctly sweeter and more complex taste, which translates directly into the bean.
After sorting, Santiago exposes the cherries in this lot to a 45-hour aerobic fermentation - a hard to monitor, but critical step. The result is an immensely rich, unique, and full-bodied cup. We taste notes of coriander seed, prune, and cardamom.
